Summer Gazpacho

On warm summer days, your body craves cooling, hydration, and light meals. This cold, raw soup is packed with antioxidants, fiber, and natural electrolytes – perfect for supporting detox and recovery without weighing you down.
Gazpacho is a classic from the Spanish kitchen. It’s ideal as a lunch, starter, or light meal after a summer workout or day at the beach!
Ingredients
Serves 2:
- 4 ripe tomatoes
- 1 red bell pepper
- 1 cucumber (peeled and deseeded)
- ½ red onion
- 1 clove of garlic
- 1 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar or apple cider vinegar
- 100 ml cold water (or more to adjust thickness)
- Sea salt and black pepper to taste
Optional toppings:
- Diced cucumber and red pepper
- Pumpkin seeds, hemp seeds, or sunflower seeds
- Fresh herbs: basil, mint, coriander, or parsley
Preparation
Roughly chop the vegetables. Add the tomatoes, bell pepper, cucumber, onion, and garlic to a blender. Add the olive oil, vinegar, water, salt, and pepper. Blend until smooth. Chill in the fridge for at least 1 hour to serve extra cold. Serve with fresh toppings and enjoy!
